Swimming Lesson

While we were at Killarney Lake Friday with the kids, I noticed quite a few people there with their dogs ... and the dogs were allowed in the water! I thought the city would have a by-law banning that! I mean, really, it sounds like a soap box Brad Woodside would jump on, doesn't it?

But since dogs are allowed in the Lake, Mum and I decided to take Sunny and Gus there Friday night. It's been at least 5 years since Sunny has been swimming because Lukey became so ill. And Gus had never been swimming before! I couldn't wait to see his reaction!

They LOVED it!!! Sunny is an old pro of course. And Gus took to it like a duck to water ... or a retriever to water, hehe. Gus's only problem was when Suny swam right over him and dunked him, head and all, into the water. Poor little booger. Gus had a hard time with the concept that the ground would keep dropping away until he had to start swimming or drown ... but he finally started to grasp it.

This will definitely be something we will repeat. They had a blast, it was great exercise, and it tired Gus out totally! LOL!

Cowboy Casserole

Here's another recipe for you! An easy, tasty way to get some fiber into your diet - specially for picky kids! It uses ground beef, but you can always use ground turkey or chicken to make it even lower in fat. I also added a small minced onion and a large carrot, shredded to add a bit more nutrition. The sweet BBQ sauce I used was actually one I made myself. You can find the recipe here: Jay's BBQ Sauce. I actually make about 1L at a time and keep it in the fridge.



1 lb. lean ground beef
1 small onion, diced
1 large carrot, shredded
1 - 14oz can baked beans (I used Graves Pork in Molasses)
1/2 cup sweet BBQ sauce
2 cups Bisquick
2/3 cup milk
1 tbsp butter, melted
1/2 cup shredded cheddar cheese



Preheat oven to 400 degrees. In a non-stick frying pan, brown ground beef with onion and carrot until beef is no longer pink. Add canned baked beans and BBQ sauce and stir til combined. Bring to a simmer, stirring occasionally. Spoon beef-bean mixture into an ungreased casserole dish.



In a large bowl, mix Bisquick, milk and melted butter until just combined. Spoon the Bisquick mixture on top of the beef-bean mixture by the tablespoon - to make "dumplings". Bake for 20 minutes. Sprinkle cheese over the Bisquick dumplings and bake another 10-15 minutes.

Pumpkin Spice Muffins

Here's a truly tasty concoction I whipped up last night!

1 cup packed brown sugar
1 cup canned pumpkin
1/3 cup vegetable oil
1 tsp vanilla
2 eggs
1 tsp VE Pumpkin Pie Spice
1/2 tsp cinnamon
1/4 tsp salt
2 tsp baking powder
1-1/2 tsp flour

Grease a 24-mini muffin pan. Preheat oven to 350 degrees.

In a large bowl, whisk together the sugar, pumpkin, oil, vanilla, and eggs until blended. Add spices, salt and baking powder. Stir til combined. Add flour and whisk vigorously until well mixed and there are no lumps.

*At this point, you can add 1/2 cup chopped pecans or walnuts. *

Fill each muffin cup until almost even with the top. Bake for 10 minutes. Check with a knife tip or needle to make sure centers are done. Allow to sit and sweat for 10-15 minutes. Remove muffins from pan and cool on a wire rack.

Store in an air tight container in a cool dry place, or in the fridge.

Life's lying, full-of-shit, hypocritical bystanders

I hate drama. It bothers me. I know there are some people that simply thrive on it. But I am not one of them.

I hate liars. They piss me off. I know there are some people who can't do anything but lie. But I am not one of them.

I hate hypocrites. They disgust me. I know there are MANY people who are nothing BUT hypocrites. I am not one of them. At least, I try not to be.

I hate lying, full-of-shit, hypocritical bystanders who think they know what they are talking, but are simply talking out of their asses.

Sometimes I hate taking the high road. Specially when all I really want to do is say fuck off and get a damn life! YOU don't know what you're talking about so shut your cakehole! Otherwise, you're just spreading lies and rumours. And how does that make you any better than those you are condemning?

There! That's one rant off my chest.
