Roasted Red Potatoes with Bacon & Cheese
1 cup Kraft Calorie-wise Rancher's Choice Dressing
1 cup shredded cheese (calls for mozza, but I used cheddar the 1st time and nacho mix the 2nd)
1/3 cup Oscar Mayer Real Bacon Bits
2 lbs small red potatoes
1.Pierce potatoes and microwave for 7 minutes.
2.Preheat oven to 350 degrees.
3.Grease or PAM a 9x13" baking pan.
4.Mix dressing, cheese, and bacon bits in a medium bowl.
5.Remove potatoes from microwave and carefully cut into quarters (VERY hot).
6.Toss potatoes with dressing mixture and spoon into pan. Cover with foil.
7.Bake 15 minutes. Remove foil, stir potatoes, and return to oven. Bake another 10-15 minutes.
This next recipe is one I made up myself. It's actually much better the day after. The Bruschetta can be made the night before to minimize prep time and work after work and/or school. I haven't tried it yet, but next time, I am going to use canned diced tomatoes and see how that works out.
Bruschetta Chicken Pasta
4 cups diced fresh tomatoes
1 red onion, diced
2 tbsp olive oil
6 tbsp VE Bruschetta Herbs
VE Salt, to taste
4 chicken breast cut into 1" cubes
2-1/2 cups penne, uncooked
1.Mix tomatoes, onions, olive oil, and VE Bruschetta Herbs. Season to taste. Allow to sit minimum two hours or overnight.
2.Preheat oven to 350 degrees. Grease a casserole dish.
3.Toss chicken and Bruschetta together. Spoon into casserole dish.
4.Bake 30-45 minutes, or until chicken cubes are cooked through.
5.While chicken is cooking, cook the pasta according to package directions.
6.Once chicken and pasta are cooked, toss together. Sprinkle pasta with grated Parmesan, to taste.
I decided to post my BBQ sauce since I have been asked about it a few times. The amount of sugar you use is totally up to you ... how sweet is your tooth? Mine's pretty darn sweet, which is why I tend to go with the 1/2 cup. The 2+ minced garlic ... that's as much or as little as you like. It's all about how garlicky you like food. I use the VE Barbecue Seasoning here, not the BBQ Rub. You could try with the rub though. If you do, let me know how it turns out.
Jay's Barbecue Sauce
1 cup ketchup
1/4 - 1/2 cup sugar
2 tsp VE Barbecue Seasoning
2+ tsp VE Minced Garlic
1 tsp VE Toasted Onion
Combine all ingredients and allow to sit at least 30 minutes before use.
Remove desired amount for BBQ'ing. Never BBQ straight from the storing container.
Can be stored in an airtight container in the fridge for at least 2 weeks.

I just got back from Wally World. I have no kids but I am now the proud new owner of this: Seriously, I know the kids will enjoy this. Of course, it doesn't look exactly like that. It currently in a flat box on my deck. That will be interesting to put together. I guess that's my goal for the weekend?
This morning, I broke out some new toys ... the Dora and Diego cars. They were a big hit. And surprisingly little fighting over sharing. They each all took turns and they also gave each other pushes! Generous little things.
I got some great colour accent pictures. I am only posting two ... just ones that absolutely stand out for me. The first is Livy. That Olivia takes an amazing pic!
This next one is way too adorable! I mean, it's scrapbookable. Liv and Jess sharing a car.
While we there, we acquired a helper. She helped Jess with the slide. She entertained Lauren and kept a hold on her hand while I talked to Julie (Jess got picked up early). She was a great help!
So the last set of photos, I just HAD to share. The last one makes me laugh everytime I look at it. It's kinda mean to laugh , but OMG it's too funny. Classic Jess.
They love this slide .. it is the highest on the playground and they beeline for it. So Lauren goes down the slide.

When I was about twelve, I was hanging out with group of kids down the street. We were rrunning around, acting foolish like normal kids. There was one boy, he lived in "that" house. He was always bigger than the rest of the kids. He was also a little older than me. I don't know how it happened, but we ended up on his lawn, all the other kids were in the neighbours backyard. It was dusk, getting dark. At first, I thought he was just wrestling. I mean, I was a dumb twelve year old, so what else could it be? I finally clued in when I felt him trying to pull my shorts and panties down. He almost had them all the way down my thighs. I was terrified. If the other kids hadn't come running and screaming from the neighbours backyard - they were playing - he might have succeeded. None of the other kids ever realized what happened. I never told anybody. I never talked about it. Like I said, I blocked it for the longest time.
I still see him sometimes when he visits his mother. I freeze up everytime. He smiles and waves. I just look away and keep driving.
Sometimes I think - What if? What if the kids hadn't come back around? What if no one had noticed?
Princess and Lady Lipgloss, you are not to tell anyone who this is. I'm serious. It was a long time ago and I don't want it getting out who it was.
