Thai

So, I said I would post the recipes for the dishes we had Saturday night at the crop. They are sooooo easy and very flavourful.

Green Curried Mussels

2-3 lbs cultivated mussels
2 tbsp vegetable oil
1 tbsp green curry paste
2 green onions, chopped
2 large shallots, chopped (or 1/4 onion)
1 tbsp ginger, grated
2 cloves garlic
3 pcs lemon grass
1 can coconut milk (like Tosca)
2 limes, juiced
2 tbsp cilantro, minced
1 package basil


1.Heat oil in a 6-quart stockpot over medium heat.
2.Fry curry for 1 minute. Add green onions, shallots, ginger, garlic, and lemon grass and saute for 1 minute.
3.Add coconut milk and lime juice. Bring to a boil.
4.Add mussels and toss to coat. Cover tightly and steam for ~5 minutes.
5.Add cilantro and basil. Toss mussels in liquid. Serve in a large bowl.


Chicken Satay with Spicey Peanut Satay Sauce

8 boneless skinless chicken thighs, cut into strips
8 skewers, soaked in water
Marinade
1/4 cup minced lemon grass
1 small onion, quartered
2 cloves garlic
2" length of ginger, peeled and sliced
1/2 tbsp Turmeric
2 tsbp ground coriander
2 tsp ground cumin
3 tbsp soy sauce
4 tbsp fish sauce
5 tbsp brown sugar
1 tbsp fresh lime juice (I used half a lime)

1.Place all marinade ingredients in a food processor and process well. Taste test - should be quite salty. If not, add more fish sauce.
2.Toss chicken and marinade in a bowl, coating chicken well. Marinate 1 hour or longer(preferrably overnight).
3.Just before grilling, thread chicken on skewers. Grill on the BBQ or 2-3" from top element in a 350 degree oven until no longer pink.
4.Serve with Spicey Peanut Satay Sauce.

Peanut Sauce

1 cup dry roasted peanuts
1/3 cup water
1 clove garlic, chopped
1/2 tsp soy sauce
2 tsp sesame oil
2 tbsp brown sugar
2 tbsp fish sauce
1/2 tsp tamarind paste
1 tsp red chili sauce
1 tsp fresh lime juice (I used a half a lime)

Place all ingredients in a blender or food processor. Blend until sauce is smooth. To make sauce runnier, add more water.


Thai Red Curry

2 tbsp Thai Red Curry paste
2 cans coconut milk
2 tsp fish sauce (or more to taste)
5 tbsp brown sugar
2 tsp lime juice(I used half a lime)
Zest of lime
1 stalk lemon grass, roughly chopped
2 pcs galangal
1 red pepper, sliced 1/2"x2"
1 green pepper, sliced 1/2"x2"
1 onion, sliced thinly
1 lb chicken, thinly sliced

1.Heat red curry paste in a large pot over med heat. Add coconut milk and bring to a simmer.
2.Add fish sauce, brown sugar, lime juice, lime zest, lemongrass, galangal and contimue to simmer. Add chicken and simmer 5 minutes.
3.Add vegetables and simmer another 5 minutes or until chicken is cooked and veggies are tender crisp.
4.Serve over Jasmine Rice.


Coconut Pumpkin Custard

1 can coconut milk
1 cup pure pumpkin
3/4 cup sugar
4 large eggs
1/2 tsp salt
1/2 tsp cocnut extract
1/4 tsp nutmeg

1. Preheat oven to 350 degrees.
2. Whisk all ingredients together until well mixed.
3. Lightly grease a small casserole dish. Pour custard in dish.
3. Make a water bath by filling a 9x13" casserole dish with hot water. Place custard dish in water bath.
4. Bake custard for 35-40 minutes or until set in the center.

Sunny Days

Are, hopefully, here to stay.

I visited my quack Monday and she was suprisingly good about a new A-D prescription. I told her about the anxiety and everything ... she immediately changed me back to Sertraline. A little dizzy at times (usually when I'm sitting, oddly enough), but not bad.

It was great to have the opportunity to weigh myself, which I hadn't done since the end of the Biggest Loser. So since June, I have lost almost a Tori. It will be a major accomplishment when I lose a full Tori ... I think I will have to actually scrapbook that, picture of the two of us, a must. Only another 20 some pounds to go!

My doctor also had the results of my blood tests ... I passed with flying colours. Well, not the sex hormones part ... of course they are low, but everything else was great. Thyroid, blood sugars (both tests), cholesterol ... all wonderful. Oddly enough, I am healthier than a lot of skinny people I know. Sad, huh?

I went to see 27 Dresses Monday night .... it was hilarious! Yes, Katherine Hiegl's character was very "Izzy", but it was still slap my ass funny. Specially the Benny and the Jets part. I didn't know a man could hit notes that high without first sustaining a major injury to his groin. I will definitely be buying this one.

And on a sad note, I am still having a hard time wrapping my head around the fact that Heath Ledger is dead. It's so unreal. I remember the first time I ever saw him in anything - a TV show called Roar. Soon after that, it was 10 Things I Hate About You ... which I still can't believe Nick has never seen. I sincerely hope he's found the peace he was looking for.
