Recipe Time!

For the past few weeks, I've been planning our suppers a week in advance, just to make my life easier. I am not a big fan of pork (with the exception of bacon, ham and sausage - all the bad stuff!) so I rarely plan pork for supper. I figured I should since Mum does like it. So, last night we had Pork Burritos. I honestly thought they would be crap. But holy! Were they good! I was so pleasantly surprised! Despite the number of ingredients, it was easy to make. It may be outside your comfort zone with the use of chipotle chilis, but don't be intimidated - give it a try!

Chipotle Pork Burritos

2 tbsp veg oil
1 lb. ground pork
1 onion, diced
2 garlic cloves, minced
1 tsp each ground cumin and coriander
1/4 tsp each salt and pepper
1 cup mild salsa
2 canned chipotle peppers, minced (or 1/2 tsp chipotle chili powder)
1 tbsp dried parsley
4 large flour tortillas
1 cup cheddar cheese
1 green pepper, diced
Half tomato, diced

1. In a large skillet, heat 1/2 the oil over medium heat: fry pork until no longer pink. Set meat aside. (If you use a non-stick skillet, you can skip the veg oil)
2. In same skillet, heat remaining oil; fry onion, garlic, cumin, coriander, salt and pepper, until onion is softened, about 5 minutes. Return pork to pan. Add salsa and chipotle peppers; simmer until thickened, about 5 minutes. Stir in parsley, peppers, and tomatoes. Simmer another minute or two.
3. Preheat oven to 400 degrees. Spoon 1/2 cup of mixture onto flour tortilla center; sprinkle with cheese. Fold bottom over filling, then sides; roll up.
4.Bake on a rimmed baking sheet, turning once, for 10 minutes or until golden.

It calls for 4 large flour tortillas and to divide the mixture between the four. I found that was just too much - I ended up making 5 burritos and had leftover meat mixture for at least 3 or 4 more. The leftovers are in my freezer just waiting to be thawed out one day when I want a quick tasty meal. I also served it with a bowl of lettuce, onion, and tomato topped with Old El Paso's Zesty Ranch Topper.

Grey's Trauma

Ok, I just CANNOT survive another Grey's death. Specially Mer's. But she's not dead. Not yet. She can't be. I refuse to believe it. She will survive.

I spent most of the friggin episode in tears AGAIN. Damn it!

I felt horrible for Cristina - Meredith is her "person" and she just can't get Preston to understand that. Maybe it's a female thing.

Derek, when he carried Meredith out of the water, took my breath away. He noticed that she disappeared. And he found her. She can't leave him now.

McSteamy and McDreamy ... made me cry even harder. Derek is his best friend, his brother, his only family ... no matter what they've done to each other, Mark will be there for Derek.

I can't believe it was seven years ago that you were born! Have a happy, happy birthday! Love you bug!

My Scrappin' Space

So, my scrappin room doubles as a craft/sewing room, as well. And it looks it too. I don't have near enough storage for all my items. And then there's the fact that I pulled my desk apart to pack my tote to take to Nick's last weekend and just left since I was going to a crop Saturday!

People Are Stupid Part I

Selling, like buying, on e-bay is usually a pleasant experience. But then, you get some doosies. They serve to remind you that people are just plain stupid.

Before Christmas, I had a lovely run in with a seller who shit on me and sent me verbally abusive e-mails because I dared mention the fact that she was two weeks late mailing my purchase out.

That brings me to today. I have some stamp sets up on e-bay and the very first one that sold went to the biggest dipshit. Before I had a chance to invoice her, she sent me a payment. With $3 for shipping and handling. Ummm... the freakin base rate for parcels is $6.50! Give me a break! You can't even send a parcel in the States for $3!

So I refunded her payment and sent the invoice. She pays it quickly. But it seems like she feels she has paid for the opportunity to be a bitch. She e-mails me that the shipping was outrageous and she wasn't going to buy anything else from me, blah, blah, blah. My thought - Oh please be telling the truth! So I e-mailed her to thank her for her purchase, but shipping was clearly stated in the item description, if she had any concerns or questions, she should have e-mailed me prior to purchase, and I included the item description text so that she could check it.

Her erudite response? "You are a jerk!!!!"

So I gave up on Cyst and Sinus and just went to Aquacise alone tonight. It was fun! A different instructor this time so there were all new moves and slightly better music. And as a bonus, it starts earlier on Monday nights - 7:45. I'm home and in the door at 8:35 - in time to watch all my shows ... of course that doesn't apply to Prison Break tonight since it isn't on. Damn "24" - why does it need to be 2 hours? Anyway, Aquacise was good and I will definitely go next Monday or Wednesday.

New Kicks

Well, I discovered last night that I needed new sneaks - the hard way! I've had these pair for more than five years and they have served me well. I didn't realize that I had worn the fabric and padding away from the plastic heel support on my right shoe. I made myself go for a walk last night with my nice new MP3 and I got a bloody blister for my efforts. In a more pessimistic (or lazy) person, this could be taken as a sign not to excercise anymore.

So, I decided that I HAD to get new sneaks today. I intended to shop around ... but I found the perfect pair at the first place we went. They were sooooooooo confortable! I couldn't even feel it rubbing against my blister. They are the perfect combination of fit, comfort, and support. And for the price, I couldn't just leave them there! They were $79.99, regular $99.99. The frosting on the cake? They're grey and PINK!

I landed at Nicole's around 4pm yesterday and in the whole time I was there, I accomplished two LOs. Well, not even. The first LO couldn't be finished because I left my Colorbox chalk inks at home, so I had to finish inking the chipboard this morning - because it had to be the "perfect" orange.

The second one can't be finished until I get my SU order that I placed today - On Board Simon Lowercase Chipboard set ... it has a set of brackets that I want to use on the LO. It came to me this morning. I don't remember the names of all the kids in my kindergarten class, but I do remember quite a few and I wanted to be able to "point them out". So I plan to use the brackets and a transparency to make it work.

Now I know it's no "King of the Tay", but I think they turned out pretty well.


Wow! What a change!

Daniel Radcliffe of Harry Potter fame is making his debut on London's West End this winter. For those of you that don't know what the West End is, it's London's Broadway. He will star in Peter Shaffer's "Equus". Daniel plays Allan Strang, a young man who savagely blinds six horses with a metal spike and is sent to a psychiatrist, played by Richard Griffiths (coincidentally - Uncle Vernon in the Harry Potter movies).

He reportedly will appear naked, having an orgasm while riding a horse, and have a sex scene in the play! Are they talking about the West End or Porn Valley? Danielle Radcliffe will certainly shed his innocent child actor image quickly with this endeavour!
