Recipe Time

I tried a new recipe last night from my new Cooking Light Chicken for Dinner magazine. It was so easy and extremely tasty. It's served with Jasmine Rice and some steamed veggies.

Thai Chicken with Peanuts

4 skinless, boneless chicken breasts
1/4 tsp salt
1 tbsp canola oil
1 cup fat-free, low sodium chicken broth
3 tbsp sweetened chili sauce (like PC Memories of Thailand)
2 tsp fish sauce
1/4 cup lime juice
2 tsp peanut butter
2 tbsp chopped peanuts

1.Place each chicken breast between two sheets of plastic wrap and pound to a 1/2" thickness with a meat mallet. Sprinkle chicken with the 1/4 tsp salt.

2. Heat oil in a large nonstick skillet over medium heat. Add chicken and cook for 6 minutes on each side, or until done. Remove chicken from pan and keep warm. (I cooked the rice before the chicken, so I put the chicken on top of the rice in the saucepan to keep it warm. Less dishes and mess.)

3. Add broth, chili sauce, and fish sauce to the skillet and bring to a boil, scraping any browned bits from the bottom. Cook until broth has reduced to 2/3 cup. Remove from heat and add the lime juice and peanut butter, stirring until mixed. Serve sauce over chicken, and sprinkle with chopped nuts.

Secret Santa, Part Deux

So, I got royally spoiled last night. I got gifts from people who weren't my Secret Santa! I know it was to thank me for hosting the SS Exchange, but it was totally unneccessary. I'm not saying that I don't appreciate the gifts...because I LOVED them all, they were all very lovely. And thank you very much for them. But I really enjoy hosting the SS and having everyone over. That's a huge gift for me in and of itself.

Now that I am looking at this pic, I realize that I forgot a couple of things to put in it. Oops! Sorry!

Now, my Secret Santa Nicole spoiled me rotten! She gave me a set of muffin pots with leeettle apples painted along the top ... they are so adorable! And a cake plate and serving tool that had snowmen painted on it ... snowmen are my fave Christmas images. Oh! and a dip chiller. I've only seen these at craft shows before ... it's almost like a tart burner ... the dip goes into the top dish that sits in another dish that gets filled with ice. Very cool idea and it will be well used! Hmmm, am I seeing a trend here? LOL!

Toblerone! Not just one! Santa Nick gave me a chocolate Toblerone and also the one with "snow cap", the white chocolate top. Two beautiful Polonaise(blown glass) ornaments - a Santa and the cutest angel in a pink dress.

THEN I was even more spoiled! She gave me the MM Silent Setter and the Paper and Ribbon Punch Tools. AND THEN Santa Nick gave the Design with 2007 Calendar!!!!

Thank you sooooooooooooo much Nicole! Ok, I'm a little verklempt right now. I really appreciate everything and I love it all. Ok, I am going to stop now before I really start crying.

Secret Santa, Part I

Ok, so it's getting really late and I really want to get to bed.
SO, my post will be about cleaning up! Yes, ladies, I have the house cleaned up, with the help of Anita. Anita is staying the night instead of chancing the roads out to the Burg. So, we did dishes, and cleaned up. It only took a half hour.



I am going to post about my gifts tomorrow ... it' going to take a while, as SS Nicole, absolutely rocks!

Only 1 More Sleep!!!!

I can't wait! I'm soooo excited! I can't wait to see the looks on peoples faces when they discover who their secret santa are. Particularly, those that "think" they have it figured out.

Better make sure I have my camera batteries recharged for the reveals!
