So this is why I was so antsy to get my SU order. I realized when I was putting the finishing touches on the December calendar LO that I needed the Sticky Strip I had ordered.

Anyway, I am halfway to being stress free. My CTMH and SU orders came in, so now I am waiting on the freakin' mail. Crossing my fingers for Monday!

So Tired

Really, really tired. I've been keeping late nights trying to finish things up. I am half way done my baking...only three more things to make and they are fairly easy items. Thank goodness.

My cleaning has come to a standstill ... what's the point trying to keep things straightened up with my mother around? Every time I turn around, she is covering every available surface with clutter. And the floors? Absolutely no point trying to keep those clean with all this crappy mild weather! Muddy dog paws everywhere!

And last but not least, the waiting is killing me. I am so tired of waiting for everything. I am waiting on the mail for those last minute items for my SS. I'm waiting on CTMH for the order to arrive with items for Christmas. I am waiting on SU for my order to arrive so I can finish my sister's gift. I just want it all to be here NOW so I can stop worrying about it.

News Watch!

So I was watching the ATV news at 6 tonight and they were doing a report on Premier Graham reducing the expense of senior care in NB. They featured some of the residents of York Manor and guess who else they interviewed? Mary Kay!

Microwave Peanut Brittle Recipe

My directions are going to be very detailed so that Princess can try this ... and I fully expect her to. The directions are for a 700W microwave. I don't know what mine is, but it worked out fine!

1-1/2 c. dry roasted peanuts ( I just used the cheap blanched, salted NoName peanuts)
1 c. granulated sugar
1/2 c. light corn syrup (I used what I had on hand - golden corn syrup)
1 tbsp butter OR margarine
1 tsp. vanilla extract
1 tsp. baking soda

1. Grease a large cookie sheet with cooking spray and, here's the big tip, put it in a 250 degree oven. This will allow you to spread the brittle a little easier later.

2. In a glass bowl (I used a Pyrex 8L glass measuring cup/bowl), mix sugar and corn syrup. It will look like sand, because there is so little moisture. Pour the peanuts on top. No need to mix them in. Microwave for 6 - 7 minutes (I went with 7).

3. While the mixture is in the microwave, measure out the rest of your ingredients. This is important because you won't have time to do it later as you go through the steps.

4. When the 7 minutes are up, remove from the microwave and stir in the butter/margarine and the vanilla. Microwave for 2-3 minutes (I went with 3).

5. Remove your cookie sheet from the oven just before the timer goes off on the microwave.

6. When the 3 mintues are up, remove from the microwave and quickly stir in the baking soda. Pour the mixture onto the cookie sheet and quickly spread it around.

That's it! No candy thermometers, no soft and hard boil stages. Just set it and forget it!

Microwave Peanut Brittle

This was the EASIEST Peanut Brittle that I have EVER made!
It's so easy, that I can guarantee that Princess can make it without a hitch!
No slaving over a hot, boiling pot of caramelizing sugar. It's like one of those infomercial sayings ... "you just set it and forget it!".
The only 'bad' thing about this is that you can only make one pan at a time. Doubling the recipe can screw the whole thing up.
So I am off to make another batch! Toodles!
